Cheezio Broccoli Soup
4 tbsp butter
- ¼ cup flour
- 1 medium shallot finely chopped (½ cup) does a medium shallot yield 1/2c ?
- 3 cups chicken broth or vegetable
- 1 cup half and half
- 4 cups chopped broccoli
- 1 cup shredded carrots
Melt butter and saute shallots on low heat. Once shallots are slightly caramelized add flour and cheezio seasoning. Cook for an additional 1-2 minutes and add in broth and half and half. Turn up the heat to medium and slowly whisk away any clumps until smooth.
- Add chopped broccoli and shredded carrots. Bring up to boil and turn down heat to a simmer.
Simmer for 10 minutes until broccoli is cooked through.
Serve immediately. Leftovers can be stored for up to 5 days.
