1 lb ground protein of your choice
1 packet Sloppy Papi
½ cup onions, diced
½ cup ketchup
1 tbsp apple cider vinegar
1 egg or ¼ cup egg alternative
¼ cup parsley leaves, freshly chopped
¼ cup Parmesan cheese, shredded OR nutritional yeast
½ cup breadcrumbs, panko, Italian or gluten-free option
Your favorite store bought marinara sauce (we like Rao’s)
Preheat oven 400 degrees. Line a baking sheet with parchment paper.
In a large mixing bowl, add in protein, Sloppy Papi seasoning, onions, ketchup, apple cider vinegar, egg or egg alternative, parsley, Parmesan or nutritional yeast. Mix thoroughly with your hands or a fork. Try not to overmix!
Shape the mixture into golf size meatballs and space them at least half an inch apart. Drizzle olive oil over the meatballs.
Bake the meatballs for 20-25 minutes, until a nice brown crust forms and it’s cooked through.
Eat as-is or serve with a hot bowl of your favorite marinara sauce!
