Sloppy Rice

Ingredients
2 tbsp olive oil
½ cup onions, diced
2 cups rice of your choice

1 packet Sloppy Papi Seasoning
½ cup tomato paste
2 tsp sea salt
2-3 cups of water or broth of choice, follow instructions based on type of rice
2 tbsp butter, optional
Directions
Saute onions on medium-high heat in olive oil in a medium size pot. When onions are slightly caramelized, add the rice and saute until the rice is lightly toasted.
Add Sloppy Papi seasoning, tomato paste and salt to the rice. Stir to evenly coat.
Add water and bring the mixture to a boil. Once boiling, lower heat to low and cover.
Cook for 15-20 minutes, or according to instructions based on the type of rice. Remove lid to check on doneness.
When rice is cooked through, add butter and fluff rice with a fork. Adjust for seasoning, if needed.
Eat immediately and leftovers can be stored for 3 days.
