Cheezio Smashed Broccoli
1 large head of broccoli, cut into florets
Olive oil spray
1 packet Hi Note Cheezio Pepe seasoning mix
Optional: garnish with a squeeze of lemon juice
Preheat oven to 450° F.
In a large pot of boiling water, add the broccoli and cook for about 2 minutes, just until it has turned bright green. Drain the broccoli and rinse with cold water to stop it from cooking. Allow the cooked broccoli to drain for a few minutes to get as much water off of the florets as you can.
Transfer the broccoli florets to a large sheet pan that has been lightly coated with olive oil spray. Using a mason jar or the bottom of a small glass cup, smash each broccoli floret until it has flattened a bit. Be careful not to smash them too hard or they will fall apart.
Spray each smashed floret with olive oil spray and then sprinkle Cheezio Pepe all over them. Give the florets another quick spray of olive oil.
Bake until the florets have become crispy, around 7 to 10 minutes.
Garnish with a squeeze of lemon juice, if desired. Serve immediately while hot.
