This Super Fly Cauliflower Fried Rice is a mouthwatering and wholesome variation of the beloved fried rice dish. It stars cauliflower rice as a low-carb alternative, mixed with frozen vegetables, scrambled eggs, and a flavor-packed blend of Super Fly seasoning, soy sauce, and sesame oil.
Ingredients
2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 eggs, whisked with a pinch of salt
- 20 oz frozen riced cauliflower
- 2 cups frozen vegetable medley- corn, peas and carrots
- ½ cup sliced green onions.
- 3 tbsp vegetable oil
1 pack Superfly seasoning
Directions
Preheat a large nonstick fry pan or wok on medium heat with 1 tbsp of vegetable oil and add whisked eggs. Scramble eggs until cooked through and set aside.
Turn up heat to high and add the remaining 2 tbsp of vegetable oil into the pan.
Add frozen vegetable medley and stir fry for 3-4 min.
Add frozen cauliflower rice and mix well. Stir fry for 5-6 min or until most of the water has evaporated.
Add 1 pack of Super Fly, Stir-fry seasoning, soy sauce and sesame oil. Toss well making sure all the vegetables are coated in the seasoning.
Add sliced green onions (leaving some aside for garnish) and the prepared scrambled eggs. Saute for an additional 1 min.
Serve immediately garnished with sliced green onions. Leftovers can be stored for up to 5 days.
